Quinoa Tabbouleh Salad

Another summer day, another salad recipe!


When I was in grad school, I made tabbouleh salad once a week. I loved the texture of the bulgur and it was an easy, healthy salad that could be topped with last night’s leftover protein for a quick lunch. ⁣

Fast forward 10 years and a gluten intolerance, and I still love this salad, especially in the summer! Replace the bulgur with quinoa, add some peppers (extra vitamin C!), and you are set up for a delicious and nutritious lunch.
